So, what's the deal here?

The Secret Prologue is a way to get delicious coffee to friends. We will open the Drop Store for pre-orders a few days before we are planning to roast, and will keep the Drop Store open until all roasted coffee is sold. Your best way to make sure you don't miss out on a particular coffee would be to reserve your coffee during the pre-order period.

Warning: there is no rhyme or reason to our current roasting schedule (although we hope to get a more planned schedule soon) so keep on the lookout!

When is the coffee best? How long will peak flavor last?

Oxygen is the enemy of all roasted coffee. Because of this, all of our coffee is packaged with one-way values to ensure freshness, while still allowing the coffee to off gas CO2. Since the act of coffee roasting produces a lot of CO2 within the bean, freshly roasted coffee doesn't reach peak flavor until 7-10 days after roasting. This rest period provides time for the majority of the CO2 gas to release, allowing for better flavor extraction during brewing. Peak flavor of an opened bag of coffee tends to last for ~2-3 weeks before oxidization begins to have a noticeable effect on the flavor of the coffee. An unopened bag of coffee will last for many weeks, but once opened, should be consumed within 2 weeks.

Tell me more about these coffee bags.

All of our coffee bags are certified compostable, including the zipper and valve. Our labels, however, are not and must be removed prior to composting. The bags are produced by Elevate Packaging and are certified ASTM D6400, EN13432, as well as safe for home composting by TUV. They are vegan, non-GMO, and are not made with PLA, nor contain BPA, PFAS, or phthalates. You can learn more here.

I live locally, can I get my coffee delivered?

Absolutely! During check out you can select the option to get your coffee delivered, based on your address. Local delivery is free with a 2 bag minimum (or 1 kilo bag). If the website won't allow you to choose local delivery and you think your address should qualify, please reach out!

What is the best way to brew and enjoy my coffee?

We post our favorite brew recipes for each coffee in each coffee's description. However, our standard practice is to brew with a 1:17 ratio. This means using 1 part coffee for every 17 parts water.

Using this ratio, our standard "one mug" recipe would be 25 grams of ground coffee to 425 ml of "just off boil" water. "Just off boil" water, means allowing the water to boil, then begin brewing once the bubbles have disappeared (at roughly 210F). This recipe will produce ~375 ml of coffee in the cup (or 12.5 fl oz; a.k.a. a large mug) and a single bag of Secret Prologue coffee will make 10 such mugfuls.

My coffee is tasting a bit sour and lacks sweetness, what should I do?

This is a classic taste description of under-extracted coffee. The best way to remedy this situation is to grind your coffee a bit finer, and use a larger brew ratio of grams coffee to ml of water (e.g. instead of using a 1:17 ratio, try brewing with a 1:17.5 ratio). If you aren't already using boiling water (and have the ability to change the temperature), you can also increase the temperature of your brew water.

My coffee is tasting a bit bitter and drying, what should I do?

This is a classic taste description of over-extracted coffee. The best method to improve flavor is to grind your coffee a bit coarser. If this simple step doesn't improve the coffee enough, try using a slightly lower brew water temperature. If all else fails, decrease your brew ratio of grams of coffee to ml of water (e.g. instead of using a 1:17 ratio, try brewing with a 1:16 ratio).
